Food Nate would love: Simple Goulash

So Nate, one of the triplets in Entwined, has coeliac disease. That’s the gluten-free one in case you’re wondering, but it’s also an autoimmune disease which often leads to multiple food sensitivities and which can be treated via diet*. I’ve been eating like that since last August and since I’m a creative person and I LOVE food (obsession might be more accurate, but love is shorter) I have come up with some pretty awesome recipes that pretty much anyone can eat.

Simple Goulash

Despite the restricted number of ingredients, this recipe is incredibly rich and delicious and you’ll be tempted to have seconds. Freezes well, so feel free to double/triple the recipe.


Preparation time: 20 minutes. Cooking time: 2 hours+.


Ingredients:

8 onions

Half the amount of pork (2 shoulder steaks, for eg)

2 garlic cloves

Salt

Olive oil


Instructions: Cut the onions into thick slices, chop the garlic and fry inside a pot with olive oil and salt. Once done, remove onions and sear the pork cubes on olive oil in the same pot.

Add the onions back in, plus half a cup of water or as much needed to cover the mixture. Leave covered on low heat for 2 hours, removing every half hour or so. Be careful because if it sticks to the bottom, the whole thing can take on a burnt flavour.


Serve with parsnip pure (blended, not mashed) and greens on the side.

 

*The autoimmune protocol specifically, though there are lots of ways to personalize it.
